Perched above black lava fields and the pristine greens of Black Desert Resort’s championship course, Basalt makes its setting an essential element of the experience. Floor-to-ceiling windows frame Southern Utah’s red-rock mountains, equating to a dramatic backdrop for a meal that shifts with the fading desert light.Inside, the contemporary dining room plays with color and texture itself, from a vivid ceiling installation to softly curved seating and dark, polished tables. The menu gives Utah an equally prominent role. Count on regionally sourced beef, Utah-made cheeses and farm-fresh produce that further connect the kitchen to its surrounds. Steaks are grilled over mesquite wood, but Basalt stretches comfortably beyond the familiar steakhouse formula with sustainable seafood, vegetable-driven mains and starters that strongly nod to local culture.
A carefully assembled wine cellar and seasonal cocktails round out an experience that has enough ambition to draw diners to Black Desert Resort — whether or not a round of golf is anywhere in the plans.
