Our Inspector's Highlights

  • Arriving via the elevator on the third floor of the old Chamber of Commerce building, you immediately sense the quiet grandeur of the space. Turquoise raw silk wallpaper, black lacquer finishes and soft lighting set a calm, elegant tone.
  • The wine and spirits pairing is carefully curated. Beneath the dining room, there's a walk-in cellar with not just vintage selections but also yellow wine and baijiu (a clear Chinese liquor), and the sommelier will talk you through pairing with Cantonese sauces and textures.
  • Service at the Shanghai restaurant feels like a choreographed dance: your teacup is changed without being asked, and the knife for the abalone arrives just as you glance for it.
  • At the end of the night, you’ll be sent home with a surprise treat: a small bottle of house-made XO sauce with a deep umami kick that elevates even the simplest bites.
  • The presentation is impressive — servers lift lids in unison, revealing dishes like lacquered abalone glistening under amber light or dim sum perched on porcelain shaped like lotus petals.

The Food

  • Served à la minute, the soy sauce‑marinated chicken arrives with the skin still soft and barely crisped. You’ll notice the whisper of Chinese rose wine in the lingering aftertaste.
  • Dim sum is the star at the Cantonese restaurant. The savory delights include everything from steamed rice rolls with crispy shrimp to pan-fried turnip cakes.
  • Don’t miss the hairy crab when in season. This delicacy is handled with extreme care by chef Bill Fu and his team, resulting in an almost religious experience for seafood lovers.
  • Fried rice gets upgraded with delicious preparations, including abalone and goose sauce; Iberico ham and dried scallops; and a smooth and tangy taro and preserved vegetable version that’s ideal for vegans.
  • If you can’t decide what to order, the seasonal tasting menus offer an easy way to get a taste of chef Fu’s talents. A recent autumn menu featured plates like braised M9 wagyu beef with shiso and a crispy bun stuffed with slow-braised pork cartilage and tangy preserved vegetables.
