Tucked away in The Ritz-Carlton, Amelia Island, Salt is a hidden treasure on a small barrier island along northeast Florida. 

Istanbul chef Okan Kizilbayir, who’s worked under Eric Ripert at Blue at The Ritz-Carlton, Grand Cayman and Le Bernardin, brings a French fine dining elegance to the relaxed coastal town. 

Under Kizilbayir’s expert hand, the menu covers land (like confit duck legs with celery root and white balsamic vinaigrette) and sea (tuna tartare with avocado and seaweed emulsion) with locally sourced ingredients. 

The dining room — revamped in 2025 by HBA Architecture & Interior Design — also gleans inspiration from the surrounding beauty outside. Colors from the ocean and the dunes shade the dining room’s furniture, carpet and curtains, which frame oversized windows facing the water (try to get one of these coveted seats at sunset). A black granite fireplace with a leather finish, dangling lights that resemble oversized rocks of salt and a mantel showcasing the sommelier champagne saber (a restaurant tradition) add personable touches to the inviting space.

  • Sink into luscious, expertly made main courses like wagyu with truffle hollandaise, pastrami-spiced short rib with caraway jus or butter-baked halibut.
  • Get closer to the waves by taking your meal on the Seaview Terrace. Under a pergola near a wall of greenery, you’ll savor Dover sole while overlooking the ocean.
  • If you want an indulgent experience, opt for the Chef’s Tasting, a five-course menu that combines the best of the à la carte offerings with some exclusive dishes, such as the lobster with bisque emulsion and the champagne-poached pear for dessert.
  • The Amelia Island restaurant pays attention to the details. A tray of flavored salts accompanies your meal, and delectable sauces — a highlight of many of the dishes — are poured with flourish tableside.
  • End your meal with the baklava (an homage to Kizilbayir’s Turkish roots) or the dark chocolate soufflé. Or choose from the dessert cocktails: a bananas Foster martini (Absolut 80, housemade banana liqueur, Baileys and a Biscoff cookie rim) or the vanilla chai white Russian (Absolut Vanilia, chai, honey, Kahlúa and coconut milk).

Things to Know

  • The dress code at Salt is business casual. Women don dresses (colorful Lilly Pulitzer pieces are a popular choice), while men wear slacks and jackets.
  • For a more relaxed option, drink or dine at the Salt Lounge. Featuring a wine display and cellar, it serves vino, cocktails and creative small plates.
  • If you need a private dining room, the weather-protected Seaside Terrace accommodates up to 20 guests and the Atlantic Room holds up to 30 people for indoor/outdoor dining with its own ocean-facing terrace.
  • Time your visit with the Amelia Island Cookout, an annual three-day October food festival that brings in top chefs, sommeliers, mixologists and more to Salt and the hotel.
