Earthy Mexican cuisine gets the white-tablecloth treatment at Carolina, the signature fine-dining restaurant of The St. Regis Punta Mita Resort. Named for New York socialite Caroline Astor, the exquisite space features an air of Old World elegance with a contemporary lens. Pressed napkins, wine goblets are paired with spherical chandeliers that give off a soft paper-lantern-like glow and wingback chairs with monochrome floral patterns to add both style and sophistication to the space.

The menu here goes beyond tamales and ceviche to offer a culinary tour of Mexico through the country’s vast ensemble of fresh ingredients. Executive chef Alejandro Euroza endeavors to feature traditional bounty from each Mexican state in a chef’s-table-worthy plate — and he very often succeeds.

Past highlights include a banana and Oaxaca cheese croquette, kampachi and orange tostada, and a sweet and smoky charcoal-grilled Pacific lobster tail with plantain puree.
  • Cocktails follow suit, showcasing the country’s ingredients in classic pours done with a twist (see: a mezcal fizz sweetened with agave nectar or a passionfruit-forward vodka sour).

The Chef

  • Born in Mexico’s Zumpango region, chef Euroza found his passion for cooking at just 16 after taking a culinary course at the Centro Educativo Grupo CEDVA trade school.
  • Euroza thrived at Mexico’s Coronado Culinary Arts Institute, where he was invited to participate in major culinary events like Expo el Gourmet, Abastur national hospitality trade show and culinary festival Cumbre Tajín, Mesoamerica.
  • In 2022, Euroza joined the Lago Algo cultural center in Mexico City’s Chapultepec Forest, where he became a strong advocate for the farm-to-table movement in the country’s restaurant scene.
  • He brought this local sourcing ethos to The St. Regis Punta Mita in 2023, where he championed the use of ultra-fresh ingredients to create vibrant and flavorful dishes that reflect Mexico’s rich culinary traditions.
