Tucked inside contemporary The Lodge at Blue Sky, Auberge Resorts Collection, signature restaurant Yuta serves up modern American cuisine befitting its
stunning alpine location.
Inspired by the indigenous Ute Indians, the venue’s unique moniker
loosely translates to "mountain top." Fittingly, the restaurant’s
cuisine bears witness to many regional influences, including the Native
American tribes who lived in the vicinity as well as the Spanish, Mexican and Chinese populations that traveled through and helped populate the area.
These influences translate into a diverse menu that includes
dishes such as smoked
trout Waldorf, a sagebrush smoked brisket sandwich, dry-aged Wasatch beef
ribeye and wood-oven-roasted chicken breast.
Most of the ingredients are sourced from local purveyors and farms,
if not from the onsite, organic Gracie’s Farm, named after one of the many
rescue horses that inhabit the 3,500-acre Blue Sky Ranch.
