If you want to sample the culinary explosion in Central Florida, make your way to Sear + Sea Woodfire Grill at JW Marriott Orlando Bonnet Creek Resort & Spa. Still beaming from its 2020 opening, the hotel teems with awe and subtle elegance — and nowhere on the property is that more evident than at its signature steakhouse. 

With limestone, wood and a glass-enclosed wine cellar on its exterior, Sear + Sea makes its intentions clear — this meal is meant to be elevated. These textural hints are echoed inside with soft lighting, bountiful plants and neutral-toned booths exuding an unapologetically adult energy, though we’re certain any youth in tow will enjoy a mocktail from the outdoor dining area.

There’s an open kitchen, too, complete with a broiler and stacks of chopped wood. It’s no coincidence that it’s within sightline from your seat, allowing a first-hand peek at your porterhouse as it’s getting kissed by the flames.

  • The “Sear” in the restaurant’s name, of course, refers to the impressive selection of steaks on the menu. From a 12-ounce New York strip to a dry-aged Kansas City, the kitchen consistently gets it right. We even had a standout braised beef cheeks dish during a visit, so don’t be afraid to explore other protein preparations.
  • When you’re in the mood for the “Sea,” grouper and salmon are sound choices here. But it’s the barbecue monkfish, prepared ingeniously with eel sauce, pickled daikon and sea beans, that will make you the envy of the dinner table.
  • One reason Sear + Sea is considered a top Orlando restaurant is because it keeps things fresh — literally with ingredients from the onsite garden and figuratively with new options regularly popping up on the menu. For example, a local kumquat-topped wedge salad and grilled branzino recently joined the delicious roster.
  • Plates are prepared with precision. Drizzles of balsamic in the amuse-bouche seem almost symmetrical. Every sprig of cello radish in the grilled radicchio salad sits exactly where it should. Even the desserts, no matter if it’s the lemon cheesecake or the vanilla gelato-paired Pear Elegance, look fresh from a magazine cover photo shoot.
  • On those nights when you’re not sure what direction to go with your order, let the three-course seasonal menu be your guide. As the calendar starts to warm, for instance, the kitchen deems tempura zucchini flowers and Alaska-caught halibut good additions — and we agree.
