  • The views of Cotai say it all: Saffron is on top of the world when it comes to its prime location, strip vistas, authenticity and execution.
  • Conceptualized by international interior design firm Chhada Siembieda and Associates, the floor-to-ceiling latticed wood columns, golden bird sculptures, dark stone walls and chili-hued accents create an elegant atmosphere that calls for smart-casual attire.
  • While the menu covers many Thai classics from all over the country — Phuket to Hua Hin, Bangkok to Chiang Rai — each dish has been refined with specially sourced ingredients, modern touches and photogenic plating.
  • Most evenings, the Macau restaurant surprises guests with live music by in-house band Kheem, which plays everything from Thai classical music to international pop hits.
  • You can’t go wrong with one of Saffron’s signature dishes, such as the perennially popular khao soy goong munggorn. It takes Northern-style curry to the next level with fresh lobster, crispy egg noodles, aromatic kaffir lime and ample coconut cream.

The Food

  • If you’re dining with friends or family, kick things off with a miang kham platter. The traditional Thai appetizer comes with fresh betel leaves, which you can wrap around roasted dried shrimp, coconut, peanut, lime and ginger then dip into a sauce made with shrimp paste and palm sugar to create the perfect bite — sweet, sour, salty and spicy all at once.
  • The pla kapong ob samunprai (baked whole sea bass) is another top contender, especially for larger groups. Wafting from the open kitchen, a delicious aroma of garlic, turmeric, seared lime and tamarind augurs well for the ultra-tender white, flaky fish meat inside.
  • Spice lovers will appreciate the nuea phad prik kee noo bai ye-hra (Northern-style stir-fried wagyu beef filet). Thai chili adds heat while fresh butter lettuce cools things down, and cumin leaves offer a slightly bitter, slightly sweet addition.
  • The restaurant experiments with Thai flavors on its drinks list, too. During its Thai O’Clock happy hour from 5 to 9 p.m. Wednesday to Saturday, sip on unlimited Thai-inspired cocktails like the Saffron Experience (made with gin and lemongrass juice) or a wine from Hua Hin’s Monsoon Valley Vineyard.
