The Food

  • Refined and nuanced, Jiangnan cuisine emerged centuries ago around the Yangtze River in former seats of power like Shanghai, Nanjing, Hangzhou and Suzhou. Centuries of tradition culminate in traditional dishes like the sweet-and-savory stewed Shanghainese-style pork belly — the textural and flavor contrasts require much finesse to make this specialty just right.
  • Regionality is key to Jiangnan cuisine. Don’t miss signatures like the excellent cold-marinated abalone. The delicacy is procured from the Dalian province and served here with pickled French fennel bulb, housemade chili sauce and cucumber gelee.
  • While much of the Macau restaurant menu features subtler flavors, Lakeview Palace also offers a selection of dishes representing the zesty cuisine of Sichuan. That includes standouts like traditional poached sliced beef in chili oil and thinly sliced Japanese amberjack drizzled with sesame chili oil.
  • Whatever you order, you’ll quickly find the chefs like to enhance their dishes with Western influences, specifically French. Whether it’s the classic presentation or dishes like the drunken blue lobster, these disparate traditions sync up in harmony.
  • For a real showstopper, order the fortune chicken (24-hour advance notice is required). Also known as beggar’s chicken, the dish features a whole chicken stuffed with wild Yunnan mushroom ragout, wrapped in pastry like a Wellington and cooked low and slow.
