He first made his mark as executive chef of the now-shuttered Toscana at The Ritz-Carlton, Hong Kong before branching out on his own with the original 8½ Otto e Mezzo Bombana in Hong Kong. As gourmands fell in love with his refined style of Southern Italian cuisine, chef Bombana expanded his empire with locations in Shanghai and Macau.
