The original Le Cirque is legendary because of the spectacular food and the stellar, welcoming service. Le Cirque at Bellagio holds the same exacting standards that storied restaurateur Sirio Maccioni introduced in its East Coast sibling back in 1974.
In the Vegas outpost's vibrantly colored, circus-tent-like Adam D. Tihany-designed dining room, enjoy expertly executed French cuisine with a twist. Le Cirque Las Vegas’ signature dish, the potato-crusted sea bass with a red wine reduction, lives up to its reputation as an outstanding offering. The other dishes here range from tried-and-true favorites like sole meunière to fresh takes on traditional plates, such as the Maryland blue crab with Osetra caviar. Desserts run the gamut from light and airy (a raspberry parfait with champagne gelée) to decadent (a stunning chocolate ball filled with praline mousse, white chocolate ice cream and hazelnut caramel crunch).
And don't forget about the wine. The impressive list features more than 900 international pours with an emphasis on France's top wine regions.
