Led by South Florida native chef Jonathan Kaiser, the restaurant delivers a composed European point of view shaped by classical technique, coastal sourcing and a deliberate sense of restraint. The atmosphere is polished but social, with a vibrancy that builds naturally as the night progresses. Calusso is designed for diners who arrive with intention, settle in and allow the evening to progress at its own unique pace. The menu mirrors that rhythm, favoring clarity over excess, with crudos, pastas and mains that unfold gradually rather than overwhelm. Tableside moments are integrated thoughtfully, adding ceremony without disrupting flow, while the bar and lounge offer a refined entry point for a more flexible evening.
