At the helm of the Dubai restaurant is protégé and chef de cuisine Cyle Heaney, while executive pastry chef Maxime Toreau and group pastry chef Eric Verbauwhede curate a selection of not-to-be-missed desserts with a contemporary flair on classic flavors.

  • The design aesthetic of the Dubai restaurant’s brightly lit interior has a distinctly feminine touch. You’ll immediately notice a pastel palette of fresh pink, green and clay, paired with marble and rose gold accents and mirrored surfaces. Spread over two levels are an open kitchen where chefs work with skilled precision, an elegant bar and a chic dining area with an inviting ambience.
  • Dishes inspired by chef Pic’s culinary legacy showcase her mastery in fusing varied techniques to craft a unique gastronomical experience with complex, layered flavors. Signature dishes include Les Berlingots ASP. Inspired by the pyramid-shaped candies that she loved as a child, these pasta parcels are filled with 20-month-aged Comté, Khudri dates and topinambur (Jerusalem artichokes) and are paired with a consommé infused with coffee and ginger. Paying homage to a dish Pic’s father created in 1971 is the Wild John Dory, where the fish is cooked over embers with cauliflower tsukudani terrine and saffron beurre blanc.
  • To sample a variety of signature dishes, choose from one of the set menus. The Symphony set menu offers a five-course meal that includes memorable dishes such as Norwegian scallops cooked in brown butter, celeriac sake, and coconut foam; venison with white miso sobacha and chestnut dauphine; and pigeon pithiviers, which is prepared with voatsiperifery pepper foie gras and pickled blackcurrant.
  • With beautifully presented artistic creations like the apple tatin, with its Batak caramel raw cream and bergamot granite, and the Manjari soufflé, a chocolate and voatsiperifery pepper soufflé topped with tarragon ice cream, it’s imperative to save room for dessert.
  • The innovative cocktails aim to elevate the overall dining experience by complementing the dishes. Expect libations that are pleasing to the senses, such as Blooming Plum, with its coffee-infused plum liqueur, and Sweet Bee, which has bee-pollen enhanced cognac and a touch of chamomile. Created in the aptly named Creativity Lab, non-alcoholic beverages such as Sweet Leaves (non-alcoholic rum with blueberry, vanilla and cinnamon) are equally impressive.

  • Cheese lovers should not miss the Cheese Creation with Saint-Félicien foam, smoked tonka ice cream and hazelnut.
  • Vegetarians are well-catered to as well, both on the à la carte and set menus. Dishes like onion tartelette (onion and pink pepper soufflé with black truffle) and salsify (a parsnip-like root vegetable) done with white miso, whiskey and chestnut dauphine are standouts.
