Cuvée, the Forbes Travel Guide Four-Star Chatham Inn’s fine dining restaurant, offers a rare taste of true elegance on Cape Cod. Sit in the sand-colored dining under the white ceiling, preferably close to the fireplace, to savor a four- or seven-course tasting. The menu changes daily and highlights the bounty of the Cape Cod region with global sophistication. Expect plates featuring seafood caught on a pier just a mile from the hotel and ingredients sourced from local farms.
Leading the charge in the kitchen is executive chef Isaac Olivo. A graduate of the renowned Le Cordon Bleu, Olivo has done stints at Tom Colicchio’s Craft, Michael Mina’s Bourbon Steak and Jean-Georges, among others, so you know you are in good hands.

- While the menu always changes, expect dishes like tuna and hamachi with yuzu basil and Calvisius caviar from Italy, New England lobster with gnocchi, and Berkshire pork belly with chanterelles and local clams.
- Tables are decked out with exquisite dishes, such as Villeroy & Boch china and Schott Zwiesel crystal, along with Frette linens.
- The restaurant’s Wine Spectator award-winning list offers 32 fine pours by the glass and more than 150 by the bottle.
- Desserts are spectacular and might include something like coconut cake with pink guava and honey cream or decadent Guanaja chocolate mousse with espresso fudge.
- For an up-close-and-special meal, book the chef’s table for two. A private bar-height table gives you exclusive access as the chef prepares a 10- to 12-course menu just for you. Reservations, which are required, are available 90 days in advance.
Things to Know
- The Cape Cod restaurant is open Tuesday through Saturday from mid-October through May. From June to early October, it is also open Sunday evenings.
- The dress code at Cuvée is cocktail attire. It is preferred that men wear jackets.
- Reservations are a must. You can book 30 days in advance.
- For an exceptional evening, stay overnight at the 18-room inn in either the premier king room or suite, both of which feature a balcony and wood-burning fireplace.
