And a multi-million-dollar renovation, completed in fall 2017, highlights El Conquistador's distinctive Southwest setting while ratcheting up its creature comforts. The renovation touched every facet of the resort, including regrading the pool decks for optimal views, ensuring that every plant on the property is native to Tucson and adding a new salsa and herb garden for the upscale Southwestern cuisine at Epazote Kitchen & Cocktails, the resort's fine dining restaurant.
